Oven-Fried Honey Chicken

Frying chicken is not hard, especially when you use simple preparation techniques and put your oven to use. Try adding these baked strips to a wheat-based wrap and serve with sweet potato fries. Children can enjoy this chicken with honey on the side for dipping or honey ketchup (combine 1 teaspoon honey with 1 tablespoon ketchup).

Makes 4 to 6 servings:

Ingredients:

  • Nonstick cooking spray
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon freshly grated nutmeg
  • 1 1/4 cups honey
  • 1 1/2 cups honey mustard
  • 4 tablespoons unsalted butter
  • 1 teaspoon coarse salt
  • 1 teaspoon freshly ground black pepper
  • 3 large boneless skinless chicken breasts, halved and cut into 3 to 4 strips each

Directions:

  1. Preheat oven to 400 degrees F. Line a 9-by-13-inch baking dish with aluminum foil. Lightly coat a roasting rack with nonstick cooking spray and place rack inside the baking dish.
  2. In a small mixing bowl, combine flour, paprika and nutmeg. Transfer flour mixture to a shallow dish or bowl.
  3. In a separate small mixing bowl, blend together 1 cup honey and 1 cup honey mustard together. Transfer honey mixture to a shallow dish or bowl.
  4. In a separate small mixing bowl, combine butter, salt and pepper. Rub seasoned butter over each piece of chicken.
  5. Place chicken strips in the flour mixture and gently press them into the flour mixture to lightly coat the chicken strips. Transfer the chicken strips to the honey mixture and turn strips to coat evenly with the honey mixture. Return chicken strips to the flour mixture and lightly coat with the flour mixture.
  6. Place the strips on the roast rack. Pour the remaining honey mixture over the chicken. Bake for 30 minutes, until golden and a meat thermometer registers 160 degrees F. in the thickest part of the chicken breast strips. Turn chicken pieces over on the roasting rack halfway through baking.
  7. Remove chicken strips from oven and drizzle remaining 1/2 cup honey mustard over the strips. Serve immediately.

This is a delicious chicken recipe. Serve the chicken with homemade or purchased honey cornbread and corn on the cob. Leftovers can be used in a salad, and the glaze can be used as a dressing.

Makes 4 to 6 servings

Ingredients:

  • Nonstick cooking spray
  • 4 large boneless skinless chicken breasts, cut in half
  • 1 14 cups honey
  • 3/4 cup honey mustard
  • 4 tablespoons, unsalted butter
  • 1 teaspoon coarse salt
  • 1 teaspoon freshly ground black pepper

Directions:

  1. Preheat oven to 400 degrees F.
  2. Line a 9-by-13-inch baking dish with aluminum foil and lightly spray with nonstick cooking spray.
  3. In a small mixing bowl, blend together 1 cup honey and honey mustard.
  4. In a separate small mixing bowl, combine the butter, salt and pepper.
  5. With a small paring knife, make small cuts in the thickest part of the chicken breasts, but do not cut all the way through. Place 1/2 teaspoon of the seasoned butter into the holes. Coat exterior of the chicken breasts with another 1/2 teaspoon of the seasoned butter.
  6. Place chicken in the honey mixture and turn to coat generously.
  7. Put coated chicken pieces in the baking dish. Once all the pieces are in, pour the remaining honey mixture into the pan. Cover with aluminum foil and bake for 45 minutes to 1 hour, or until a meat thermometer registers 160 degrees F.
  8. Transfer chicken to serving plates. Drizzle 1 teaspoon honey over each chicken piece.

Honey Chicken Salad

Toss leftover shredded honey baked chicken (see recipe above), crumbled honey cornbread, grape tomatoes, walnuts, romaine lettuce or mixed greens in a salad bowl. Blend together 1/2 cup honey and 1/2 cup honey mustard and serve honey dressing with the salad.
